Title: Family Turkey Loaf

  Olive oil cooking spray
3/4cMinced onion
3/4cMinced scallion, including some green
1/2cMinced celery
1/2cMinced carrot
1/4cMinced green bell pepper
1/4cMinced red bell pepper
2clGarlic, minced
1/2tsSalt - optional
1/4tsCayenne pepper or to taste
1tsFreshly ground pepper or to taste
1/2tsGround cumin
1/2tsGround nutmeg
1/2cEvaporated skim milk
1/2cLow-sodium ketchup
2lbGround turkey
2lgEggs, beaten**
2lgEgg whites
3/4cFine dry bread crumbs

This recipe was inspired by one of the world's most publiciced meat loaves. The original dish, made with ground beef and ground prok and served with a savory gravy, is on the daily menu at 72 Market Street Restaurant in Venice, California. Serve our homey version with Apple Slaw and Mashed Turnips with Roasted Garlic for a simple family meal. IF you have leftovers, use if for sandwiches the next day. Preheat oven to 350~. Spray a large nonstick skillet with cooking spray. Add onion, scallion, celery, carrot, bell peppers, and garlic. Saute ofve rlow heat until vegetables are tender and liquid is absorbed, about 10 minutes. Cool and set aside. Combine salt, cayenne, pepper, cumin, and nutmeg. Add to vegetable mixture. Stir in ivaporated skim milk, ketchup, tukey, eggs, egg whites, and bread crumbs. Mix well. Form into a loaf pan and place on a baking sheet or in a shallow baking dish lightly sprayed with cooking spray. Bake 45 to 50 minutes. Remove from oven and pour off all fat. Let stand 10 minutes before slicing into 8 portions. PER SERVING: Calories 202, protein 17 g, carbohydrate 15 g, fat 8 g, calories from fat 36%, dietary fiber trace, cholesterol 85 mg, sodium 404 mg, potassium 379 mg.
